Easy 3 Ingredient Chorizo Potatoes

2.5 pounds Yukon Gold Potatoes chopped small
3 Ounces Beef Chorizo
1 Clove Garlic
Salt and Pepper to Taste

  • Step number one. In a skillet over medium heat, add a drizzle of olive oil and the potatoes. Place a lid on the pan.
  • Step 02, Cook, stirring occasionally until the potatoes are roasted and tender, about 10-15 minutes.
  • Step 03, Remove the lid, adding a little more oil if needed and continue to cook the potatoes, increasing the heat to medium high if needed until browned, crispy sides show.
