1 lb chicken breast (boneless, skinless, thinly sliced)
2 tbsp extra-virgin olive oil (divided)
1/4 tsp salt (or to taste)
1/8 tsp black pepper (or to taste)
1/2 tsp smoked paprika (or regular)
